The Holiday rush has started! Depending on the size of your turkey, you may already be defrosting it for Thursday! For me this marks a whirlwind of activity that may last till February! It did last year as I scheduled three tea parties for friends in the month of January, in order to avoid the rush of December. My birthday and one of my best friends birthdays nearly coincide in December and that too adds to the chaos.
Thanksgiving at my house is always a family time of fun, food, football, fall walks in the leaves, games, and the evil [grin] deserts! I am getting off easy this year as dinner is at my niece’s house and all I have to bring is bread and a fruit salad. Sure all morning will be spent making and baking bread but … hey it is MY house that gets to smell like heaven! There will be twelve people at dinner so three dozen rolls should be enough? Also making a few pumpkin breads.
The fruit salad I will be making is below, and I really love it and only make it for special occasions. I could eat the whole bowl myself…. if my eyes were not bigger than my tummy – sigh. My niece is very brave, she is having her family and her husbands family over at the same time.

Fruit Salad Supreme Surprise
Ingredients
- 2 (11 ounce) cans mandarin oranges, drained
- 1 (21 ounce) can peach pie filling
- 1 (20 ounce) can pineapple chunks, drained
- 2 cups halved fresh strawberries or pkg frozen sliced
- 1 pkg frozen blueberries
- 3 medium firm bananas, sliced
Directions
- In a large bowl, combine all ingredients.
- Cover and refrigerate for 2 hours or until chilled.
- If you refrigerate over night add the bananas in before serving.
Notes:
Coconut or mini marshmallows may be added. Sprinkle with chopped pecans or slivered almonds for a little crunch. Also, apple, apricot, or cherry pie filling can be substituted. Substitute a cup of halved grapes for the cherries. Basically add the fruits you love. I use no sugar added fruits and reduced sugar peach pie filling.

Easy pumpkin parfaits
Yields 4 parfaits
Ingredients:
- 3 1/4-ounces Jell-O Pumpkin Spice Instant Pudding
- 1 cup cold milk
- 2 1/2 cups frozen whipped topping, thawed according to package directions (divided use)
- 3 sheets of cinnamon graham crackers, broken into crumbs
Directions:
- In a medium bowl, combine Jell-O Pumpkin Spice Pudding Mix with 1 cup of cold milk and whisk for 2 minutes; fold in 1 cup of whipped topping until no white streaks remain.
- Evenly spoon or pipe half of the pudding mixture into 4 small glasses; add 1 tablespoon of graham cracker crumbs directly onto the pudding layer.
- Evenly spoon or pipe half of the remaining whipped topping directly onto the graham cracker layer; repeat layers with remaining ingredients.
- Garnish with candy corns, shaved chocolate, or graham cracker crumbs. Refrigerate until ready to serve.
- Note: If you choose not to use frozen whipped topping, simply sub in whipped cream.
